In 1862, Frédéric-Jean Junck built a new organ for the Église Saint-Pierre in Gaillac. Parts of the previous organ from the eighteenth century were taken over, including windchests, pipes and parts of the case. The new organ was overhauled in 1932 by Maurice Puget. A wind motor was installed, the pedal compass was enlarged and the disposition was modified. The Laval-Thivolle company restored the organ in 1993 in collaboration with Pierre Chéron. It was reopened in June 1993 with a concert by Philippe Lefebvre.
